    You will need 

    240 g Lemon Slice Mix (1 pack)

    2 large eggs

    100 g salted butter (cold)

    3 Tbsp lemon juice

    Zest from 1 lemon

     

    Method

    1. Preheat the oven to 160°C (fan forced).
    2. In a bowl, rub the butter into the Lemon Slice Mix until combined and crumbly.
    3. Transfer half of the mixture to a lined 20 x 20 cm baking dish, pressing down firmly to form a flat layer. Bake for 15 minutes or until golden brown.
    4. To the remaining mixture, add the eggs, lemon juice, and lemon zest. Mix until smooth.
    5. Pour the mixture over the baked base and spread carefully. Bake for another 10–15 minutes, or until the top layer is firm.
    6. Allow to cool before slicing. Store in a cool, dry, dark place.
